My name is Bo Simmons and I live with my husband Henry Anderton.
We have been living in Shetland since 1988 and 1970 respectively.
I trained as a chef and Henry farmed.
We both feel passionate about good food locally sourced and providing a friendly, clean and comfortable place to stay.
When I first came to Shetland it was to fulfil a dream of running my own restaurant and hotel, which I did for 18 years.
During my time at Burrastow I used my knowledge of and passion for quality food to write a cookery book and articles for a local magazine.
I also trained other young professionals in the hospitality industry and gave horticulturalists a place to expand their skills.
Since selling the hotel I have had the excitements of a portable deli and a deli/cafe called 'The Olive Tree' serving a wide range of quality food products, home-made cakes, salads, sandwiches, soups and excellent coffee.
Henry and I have worked together for many years and enjoy meeting new people.
Both our bothys were personal projects, but we decided that they were too precious not to share with visitors to Shetland.
